Years ago, an elderly woman shared her secret to a successful hush puppy with me. She told me that using an iron skillet cooks fried foods like hush puppies more evenly every time. Personally, I tend to agree.

Watermelon Feta Salad Recipe
4 cups of cubed seedless watermelon
3/4 cup of crumbled feta cheese
1/2 cup of thinly sliced red onion
1/4 cup of fresh mint leaves, chopped
1/4 cup of extra virgin olive oil
2 tablespoons of balsamic glaze
Salt and pepper to taste
Instructions:
Start by cubing the watermelon into bite-sized pieces. Crumble the feta cheese, dice the red onion and chop the fresh mint leaves. In a large bowl, combine watermelon, crumbled feta, red onion and mint. Drizzle the extra virgin olive oil over the salad mixture. Season with salt and pepper to taste, drizzle balsamic glaze and serve cold.
